The main island canopy has stainless steel supply diffusers which introduce make up air back into the kitchen at low velocity avoiding draughts. Britannia also supplied the integral fire suppression system and the service distribution unit which had the mechanical services pre-installed ready to connect the cooking equipment.

The servery area required an ovoid shaped canopy which was worked around a structural column, this in turn was clad with stainless steel to match the canopy.

The canopies, and associated items were designed, manufactured and installed by Britannia in strict compliance with the new standard for kitchen ventilation, DW171.
