Merton College required a high performance kitchen ventilation
system for the new kitchen in their 13th century listed building
in Oxford.
The specification called for the extracted air to be free from
grease and odours, and to be discharged up a single existing
blockwork chimney stack.
Britannia's Ultrastream Ultraviolet canopy system was built
around the existing angular structure, which had the added complication
of large stone columns penetrating the cookline in several places.
The bespoke manufactured canopy incorporated an innovative balancing
system to ensure equal extract along the whole cookline, whilst
using the existing single discharge point.
Replacement air is introduced into the kitchen through low velocity
diffusers mounted in the front face of the canopy and spot cooling
nozzles also provide operator comfort.
