Terrence Conran has opened his new Plateau restaurant to 'create
an oasis of calm above the hustle and bustle of Canary Wharf'
in London.
The specification for any commercial cooking operation in Canary
Wharf calls for Ultra Violet Filtration to be used, as the discharge
must be grease and odour free.
Britannia supplied and installed their Ultrastream range of
ventilation canopies which employ Ultra Violet technology to
provide secondary grease destruction and odour removal.
Ultrastream uses intense UV light within the canopy to break
down residual grease and odours by a combination of photolysis
and ozonolysis.
Supply air was also introduced back to the kitchen using stainless
steel supply diffusers mounted in the canopy.
