The kitchen has a stone vaulted ceiling and English Heritage would not allow any new structural fixings to be installed when hanging the canopy. To overcome this problem the canopy is fitted with a structural floor support framework allowing the canopy to stand on its own support legs therefore reducing the load on the ceiling above.

To ensure the exhaust air is free from grease and odours, the canopy is fitted with integral Ultrastream UV filters.
